Merlino stands on a strip of land sitting at an altitude of 630 m above sea level, near the town of Randazzo on the slopes of Etna. The plot extends to about sixteen hectares, and was originally planted with hazelnuts, before being turned over to olive groves in the early 90s. The fertile volcanic soil, rich in organic matter and mineral elements, along with hot, dry summers, mild winters, and the mitigating effect of the nearby Alcantara river, make this area the ideal environment for producing high quality oil.
The company adopts principles of integrated production and practises permanent controlled grassing over the entire cultivated area. This promotes soil protection, enriches organic matter in the soil and reactivates soil microflora and microfauna. The goal for 2021 is to convert the estate to full organic management.
In 2019, following the renovation of the old hazelnut warehouse, the “Casa Merlino” project was launched. This initiative provides a hub of interest and accommodation dedicated to the knowledge of the food, wine and rural culture of the area, along with its traditions and cultivation systems.
